I live in Escondido, California and I want to take my family to Disneyland in December but my parents don't have papers, will that be a problem?

It could be a problem.
There is a Check-Point on both I-5 North just south of San Clemente, and I-15 North just south of Temecula. So unless you want to go several hours out of your way you will have to pass one of the checkpoints. If you pass through the checkpoint when it is open and your parents look "suspicious" like they are trying to hide something they may be stopped and asked to pull over to the side for additional inspections. What happens then is totally up to the Customs & Border Patrol officers.
The only good news for you is that these check-points are not open 24/7. They are open at random times during the day. So there is a possibility that they may be closed when you go through them. But also know that there is usually at least one officer watching the freeway from the side even when they are closed.

Its not uncommon to see Border Patrol officers on the shoulder of San Diego County freeways & highways (not checkpoints but looking out for suspicious vehicles).
Interstate 5 northbound has a Border Patrol checkpoint at the Camp Pendleton Marine Base.
Interstate 15 northbound has a Border Patrol checkpoint at the border of San Diego County & Riverside County.
The Camp Pendleton & Rainbow checkpoints are also shared by California Highway Patrol, which operate weigh stations that check big rigs.

Could be a problem. I haven't driven that way in a long time so I don't know if they just waive people through or they actually check for documents.
According to this Wiki article, there is a permanent immigration station on Highway 5 south of San Clemente and on Highway 15 south of Temecula.
